Eating in with friends

Since I recently had a baby, I've had lots of company at my house - friends stopping by to meet the baby or to bring us dinner.  Let me tell you, it has been SO nice. I'm so impressed by the thoughtfulness of my friends and family (my Galter LifeCenter friends, in particular). 

In one of these visits, my friend H and I were talking about how hard it is to eat well and be social at the same time, because most social events and get-togethers revolve around food, restaurants and bars.  Ironically, however, while we were talking about this, we were in my kitchen while both my boys were (miraculously) napping, making a fantastic, healthy, homemade lunch.  We checked in just earlier that day to discuss, and H had some great salad ingredients that she suggested she bring over.  I had some leftover roast chicken from a whole chicken I had thrown in the crockpot the day before, and some other ingredients to make homemade pizzas on whole wheat tortillas.  We chatted while we each made our contribution to our late lunch, and it all came together perfectly.  It was cheaper than eating out, we could take our time, and it was healthy and fun!   

My point is, it's easier to eat well when you make your own meals at home, and there is no reason you can't make it a social occasion.  It's a great way to share some healthy recipes or ingredients (who knew there was freeze-dried corn?) and save some money too.  Those of you with kids will understand too how much easier it is to eat at home where the kids can play (or nap) without disturbing an entire restaurant.

Salad: Kale, iceburg lettuce, cucumber, cherry tomato, apple smoked cheddar cheese, freeze-dried corn

Pizza: Whole-wheat tortilla, lightly spread olive oil, sundried tomatoes, spinach, mushrooms, roast chicken, and cheese (mine with reduced fat feta, H's with reduced fat mozzarella); baked at 405 degrees for 10 min.
